    MrHappy on YouTube also has a "let's play" that takes a lvl 1 Conjurer up to lvl 50 and clearing the first coil of Bahamut (a raid). While a decent amount is centered on healing, there is also a lot of useful information about getting your mount, materia and he goes through each of the dungeons.

    It should be theoretically easy to pay attention to the tanks he plays with (sometimes commenting on their play) and watching what they do well and what they don't.

    Tanking is quite easy early on and starts to ramp up from Brayflox Longstop (level 30 I think?) And will introduce you to more things. Stone Vigil for instance will teach you to pop defensive Cooldown skills even when doing trash mobs.
