First of all..why do I need to do level 50 content instead of moving right on to Heavensward content? Why am I collecting tea leaves and other mundane crap for random NPCs after I've saved the world?

If you pay attention to said quests, that's a recurring theme.

I have had entire parties that was new vote abandon Bismark several times in a row after 1 wipe. It's nothing new people want easy mode and carries.

You do realized they are bundled as a package and no where does it say you have to complete ARR's story line just a cryptic reference to "suffecient progress" in the early access section.

This is all kinds of false. There is a bundle but they can also be purchased seperatly. There's a statement telling you the exact quest that needs to be completed to access HW content. The OP could have waited until he completed the quest the buy HW.

Wrong no where on any promotional material, packaging, steam, se store or ps store does it say that. Believe it or not, not every one checks forums or Dev letter\blogs before buying a game.

Or we could not assume he bought the bundle because if you go on the SE website the bundle is $60.
He bought it for $40.
That is HW alone.
This is why it's better to look up information on the game before purchasing.
This is smart for any purchases really in general.
