U only get hit by enemies 10 levels or was it 9? Lower than u.
I can just walk in front of bikanus at level 60 without stealth to gather my clusters.
Also wat i do sometimes is have 2 sets one btn with full vit accessories my hp about 4.5k then swith back to my gatherer set at the node lol

It's also worth noting that Stealth can't protect you against AOE attacks. I was killed on Botanist the other day in the Dravanian Forelands when a FATE spawned behind me while I was gathering (the one with the boss mob that attacks the nearby Wild Chocobos).

Yes, I did try to get out of the way, but the AOE marker appeared when I was in mid axe-swing so by the time the animation finished and I'd tried to back out of the gathering menu I'd been one-shot KO'd! A slight increase in a gather's HP would be nice.

I agree, a gatherer should be able to stand up to around 3-4 attacks before dropping. Otherwise we end up with -hit 1- "Oh no, I'm in danger, let me hit sprint." -hit 2- dead, no reasonable time to sprint out of range.
