I once had a Bismark HM pop up in my roulette trial and half of the party left before I even loaded into the instance. Do people really stink so bad at this fight that they'd rather quit?

Wow, this is exactly what happened to me! The first time I ever fought Bismarck, I zoned into the arena and 3 people out of the group immediately left. The rest were new. As soon as we got those 3 people replaced, we fought Bismarck and beat him first try.
