No idea as I'm on a controller and keyboard combo. What I'd really like is a way to vertically ascend and descend rather than angular. It can be very annoying in certain circumstances.

I usually fly using my mouse with Right Button down. But AFAIK there are key binds for "Ascend" and "Descend", default binding is nothing, so try to set those, it might work.
If you click on the mount icon effect to click it "off" while flying it sets you into a vertical descent to the ground, straight down that you can move to cancel out of. I'm not sure what the OP is asking because it just depends on JUST how close to the ground you are. And I use just Keyboard/Mouse combo with sometimes mouse governing all movement, sometimes on autorun and mouse just acting as direction.

Using dualshock 4 on pc with ds4tool to fake xinput and triangle (jump) is ascent and circle (cancel) is descent. Holding left bumper and then tapping right bumper (weapon draw) makes my mount drop straight down to the ground.
Using only keyboard...while I don't know how flying behaves with 'normal' camera controls, it's very easy to do when using legacy type controls. Tilt camera a little down while moving forward, you get angular descent. Tilt camera a little up while moving forward, you get angular ascent. Legacy controls can be turned on from character configuration.
