OP, I have a similar dilemma, but since I also like to DPS I decided to focus on my BLM for now. It is annoying to have to sit in the queue for ages, but DPS queues are a little better now. And I hear they aren't that bad when you are doing this mythical "new content" I keep hearing about.
As for dying-- in my experience, if I die as a DPS, it isn't a big deal. But if I die as a healer, well, there's a good chance I just caused a wipe. For this reason I find it far less stressful to do dungeons/trials for the first time as a DPS. I don't always die the first time I do a new dungeon/trial, but sometimes . . . yeah, death. Video or no, I need to do it myself to learn.
I hate to say it, but I think good advice would be to join a FC so you don't have to queue up with random people that may or may not be impatient jerks. I may break down and do that myself. But I always say when I am new to a duty, and people have been pretty helpful.
Welp if you go dps u'll have time to study the tactics and if u die nobody will care =)#1 - I have to research mechanics for these bosses. I've played every kind of game under the sun, and I'm tired of having to do homework in order to complete something as necessary as a main story line.
#2 - The frustration of dying and taking the blame. I play a WHM primarily, and if I die, that's a party wipe.
#4 - If I choose to go DPS I'm now sitting in the queue for however that much longer. Not only that, but I get to play in a way that really isn't my top choice.
And that's why 75% of the players don't play tank / healers. Too hard for them lol

This is a MMO... You have to play with other people at some point... I'm sorry, but if you want to play solo through a story quest, there are offline RPGs that are great for that.
What is really so hard about those dungeons you mentioned? Most of the time now, you are going to get people that are quite geared doing those. I've healed all of them on a job I rarely play. Are you dpsing too much or something? Try going through them and only healing. Read the tool tips on your spells if you are dieing.
I've seen way too many WHM in dungeons do Medica like off in a corner by themselves then yell at me that I was taking too much damage, when I was a melee standing next to the tank (and taking like no damage, slowly dieing over 4minute fight with not even a cure 1)... Obviously for medica the WHM has to be in range...etc
Don't sweat mistakes. You can always turn off chat. People wipe in dungeons, it happens, then you get better...
Unfortunately, as a tank and healer in DF groups, a bit of study of the encounters is almost mandatory. When I've done so in the past without that knowledge first, I often get removed from the group via votes for "not knowing WTF to do." I realize I am with others who may very well have done these encounters countless times before and do it in their sleep. People do for the most part explain fight mechanics, even so, I need to experience it to really grasp how to do it, even after watching video guides.
Excluding using the DF is obviously the best way to go. PF up what you are looking for, and explain that you are new to the encounter. If you insist on using DF, expect chaos from it's random nature of those you play with. However, I disagree that Dungeons be excluded from story progression.
What we suffer is "the curse of knowledge". For new people, most of the dungeons after level 24 is considered "intense". For us, we just don't understand why newbies do not "get the mechanic" when everything is spelled out for you right in front of your screen... For them Brayflox is HARD ("you want me to Esuna all of you? move out of the way? and cure three people???), Sunken Temple is "ZOMG WTF was that", Cutter's Cry was "intense" and Titan "baby trial" was "fck this, I swear I ran and out of the train track from hell".
So far all the new dungeons are pretty straight forward. The mechanics are somewhat "too obvious" to figure it out - if you have already played ALL dungeons from 2.0-2.55 (no need to do Bahamut raid - but it helps a lot if you did). Sure you may wipe once if you go blind. The hurdle become obvious when you get a bunch of "newbies" who skip everything from 2.1-2.55 and goes straight to 3.0 without getting used to the training wheels so to speak. All in all, all the new dungeons are far easier than 2.1-2.55 dungeons.
Again, if you have been away for a year, it would be a good idea to have a week or two playing at leisurely pace and getting warm up with mechanics and rotation. You can try all the 2.1-2.55 dungeons and all the raids for bonus tomes. Your 120-130 gears will last you about level 56 or so - worth getting since it will make some early dungeons much easier. While 3.0 is not going to go anywhere anytime soon. Even the developer is giving all players 2 weeks to level up and explore before releasing raid contents. There is zero reasons to "rush, are we here yet, faster, faster, faster, NOW" to get to HW.

Stop acting like a wipe is some terrible thing meant to ruin everyone's life. I haven't wiped once in any of the new dungeons and it saddens me. The fact that most people can go into these dungeons blind and never utter a word besides "hello" at the beginning of the dungeon and coast through it unscathed is sad. Threads like this are why we can't have any difficulty. It is a shame people get so bent out of shape for minor failures. None of the story stuff needs a video guide. Trial and error should be part of the game.
The only thing trash is annoying me is when they all have frontal line/cone attacks and you have to dodge all that shit the whole fight.
I am looking at YOU, Biasts and Dragons in The Aery.
Sadly I kinda agree here, this game at times is just a mildly interactive story. Go talk to one npc, go talk to another, cutscene... kill 5 chickens, bring dead chickens to cook, cook gives you 10gil...etc Then we get to a dungeon and people freak out... But there really isn't anything to them. I wish they were more difficult. I don't mind wiping. If it's expected, people don't freak out as much. People only freak out now cause these dungeons are like 90% wipe free usually. People just need to turn off tv and put down the sandwich. Using both hands and paying attention helps. :PStop acting like a wipe is some terrible thing meant to ruin everyone's life. I haven't wiped once in any of the new dungeons and it saddens me. I play this game like one handed until I get to a dungeon... :x It doesn't take two hands to do a fetch quest or watch a cutscene... :x
Wouldn't it be great if someone one shot a dungeon and people are like "WOW we didn't die, SO AMAZING!" but it's expected to one shot so people don't even say "good job" most of the time. Not that I even want to hear it really. It's not even called for cause like, does your spouse say "good job" when you do laundry? It's sad that killing dragons is equivalent to a minor chore.
