To be honest I like this very much. Makes us explore the map and have some challenges and making us think a bit.
On other hand I really hated the moogle hide & seek! First ones were ok but there were some geez... >_<

Honestly, this aether fetch quest is one of the biggest turn off for me as well. This expansion is somewhat so so, not great, and definitely more annoying in every aspect compared to the original 2.0 - which is very well done, extremely focused mission on MSQ 2.0 (let's not mention the patches). Getting to 50 in 2.0 is such a joy that I have 3 characters in various servers fully decked out with multiple jobs. Looking at the amount of "borderline insane" annoying grindfest in 3.0, I certainly doubt I would redo this MSQ ever again.
What they should have done with this inane "aether current" - you should be required to unlock all the quest Aether, and find only 3 more, then you can fly in the areas to find the rest. That would be fair solution and actually make exploration a breeze, without affecting much of the original intention of "exploration".

You can skip the currents if you like... The only place where you're required to fly for the MSQ, you get all relevant currents from the MSQ itself.
I loved the currents stuff myself. Being able to fly is a very nice reward for doing some simple exploration.
Aether currents are nearly perfect the way they are. The only thing I'd change is making some of them harder to reach, involving some platforming and such. Kind of a missed opportunity when the areas are designed with verticality in mind.
If I want to play platforming, I would buy Mario game... 2.0 is definitely miles ahead than this expansion. I really wish they learn how to focus and make the "annoying fetch quest + find aether current + find moogles" completely optional - and give us flying abilities from the get go. Doing the fetch quest from point A to point B is far less annoying when you can travel faster.
If you start walking in circles chances are you are underneath it.
And people oh god Moogle hell don't remind me, is Ishgard sent me back twice with more side quests for that place!!!

Aether Currents are optional you just are grounded until you get them and no one is making you do churning Mists side quests
You can just do your main scenario and dungeon grind the difference if it bugs you that much, it's what we did in 2.0.
They all have platforming.
World of Warcraft Has platforming and for the first two x-pace can't fly until max level for that content cataclysm was designed around the need to be able to. Don't know don't care about the newer two.
Guild Wars 2 platforming lots of it
Star Wars the old Republic, platforming... A lot of it
Terra, Rift, Aion? Platforming. Any 3D graphics game is going to have it.
