There are also 7 new fish exclusive to Diadem, which do no show up in your log and do not count towards any kind of log completions. Now, I have only fished in Easy and Normal, and have not tried or found the fishing spots that I assume are inside caves (aggro is really an issue SE needs to look at in the Diadem), but from what I have observed and read up from others, fishing seems to work like this:
(?'s are assumptions)
Pterodactyl: Diadem skyfishing (Easy, Normal, Hard?)
Retribution Staff - Diadem freshwater fishing (Easy, Normal, Hard?)
Gem Marimo - Diadem skyfishing (Normal, Hard?)
Crown Trout - Diadem freshwater fishing (Normal, Hard?)
Eurhinosaur - Diadem skyfishing (Hard?)
Thief Betta - Diadem freshwater fishing (Hard?)
Goldsmith Crab - Diadem freshwater fishing (Hard? Maye in Normal, but only in caves?)
As of right now, the only two fish with a purpose are Pterodactyl and Retribution Staff, so if fishing for something more than the love of fishing is your goal, I would suggest just stick to Easy, and only do Normal if you want Gem Marimos.

only tried in normal and easy mode and caught all except the Eurhinosaur and the Thief Betta...Pterodactyl: Diadem skyfishing (Easy, Normal, Hard?)

and yes the goldsmith crab is in the caves in normal ... rather easy to catch and desynthed a lot already but only got bad stuff... so far desynthing any of the new fish hasnt gotten me something good.
Just caught the last of the new "real" fish for the fishing log. They're all non-big fish and pretty easy to catch during their windows, although most of them do require the folklore books.
Functional Proto Hropken: Azys Lla - The Flagship. Thunder weather, Fiendworm bait, straight catch or mooch from Platinum Fish. Not sure on time frame but 4pm-6am works. Requires Abalathian Folklore book.
Coerthan Clione: Coerthas Western Highlands - Unfrozen Pond. Blizzard weather, Brute Leech bait, straight catch. Bites from 12am to at least 5am. Requires Coerthas Folklore book.
Dravanian Smelt: Dravanian Forelands - The Hundred Throes. Any weather, any time, Brute Leech bait. Does not require folklore book, but is a collectible fish for around 12 red scrips.
Heavens Coral: The Sea of Clouds - Mok Oogl Island. Fair/Clear weather, Giant Crane Fly bait, straight catch. Bites from 12am to at least 6am, snagging on seemed to help. Requires Abalathian Folklore book.
Sunsail: The Churning Mists - Landlord Colony. Fair/Clear weather, Giant Crane Fly bait, straight catch. Bites at sunset, starting at 4pm to at least 6pm. Requires Dravanian Folklore book.
Goblin Bass: The Dravanian Hinterlands - Middle Thaliak River. Cloudy weather only, Brute Leech bait, straight catch or mooch from Sweetfish. Bites from 12am to 6am. Requires Dravanian Folklore book AND Fish Eyes.
And that's that until 3.2 I guess.

Yes. You can catch at the Swirling Cloudtop during HM.
There doesn't seem to be a particular weather that it likes and you can catch with red balloon or crane fly. However, it's extraordinarily slippery; very rare nibble and likely to get away. This fish is used in no recipe, no quest, uncollectable, and stands to be another Barreleye--a difficult fish that desynths into nothing.
