I will finish doing the story quests on my monk far enough to gain access on that character to Ishgard in order to make a gunslinger on it (currently around 40 quests remaining until then). I will then switch to my other character which has already completed the story and has access to Ishgard when servers back up and continuing the story on that character in between the leveling of the gunslinger on the other like when need break from the gunslinger leveling grind. I then afterwards plan to spend some time leveling all my gathering classes from current 50 to 60 followed by then continuing work on leveling my crafting classes.

Further down the line after leveled and geared adequately my bard, gunslinger, miner, botanist and fisher to 60, I will start a dark knight and use the leveling of that as a way to takes breaks from leveling/gearing my crafting classes. After that I do not know, haven't thought that far ahead but somewhere along the lines I will do any additional postmaster quests, hildibrand ones or other such amusing side quest content if there is any new content for those in the expansion.
