So there are lots of previous Summons, GF's and such things from previous Final Fantasy games we haven't seen. If you could bring just one to battle against which would it be?

Oh I was thinking you wanted us to pick a primal to worship. I'm going to answer assuming that is it what you asked. I'd probably pick Leviathan.
Doomtrain, in Central Thanalan. Either as world Primal FATE if you want or as an instanced fight.
Ark, in an ancient Allagan structure/Allagan-based dungeon. Call it a guardian or a form of transport when they created Dalamud.
Doomtrain was awesomeIt took me forever to get it in FFVIII (me being anti-guide) missed the one clue to get it.
Valigarmanda/Tritoch(SNES)
From what I understand, his summon attack is "Tri Disaster" and we are getting this as a new attack in the expansion.
"Fun comes first. If it isn't fun, you're doing it wrong." -Naoki Yoshida
Anima from FFX. Revisited to meet the FFXIV aesthetic standards. The set story set could be really dark and cruel, almost disturbing. Somehow connected to an NPC like Aemeryc. The fight would have a mechanic where a player must die or the party will wipe, of course the sacrificed players would be raised.
Doomtrain, yes, but make it a dungeon instead of just a standard primal fight, where you have to fight your way through the train while it races off to the afterlife.
