On Gladiator & Marauder is it best to place all of my points on Vitality early on? I've been seeing some people call for Strength but that seems to be more of a post Lv.50 when you have the proper gear.

If you feel you need more health, go VIT. If you feel like you've got enough health, go STR.
STR will help for aggro generation early on where it's usually a bit shaky. Later on, it loses its value as an aggro generation tool and is instead used to increase DPS.
VIT will... well, give you more health.
If you can keep your gear up to date regularly, I'd definitely recommend STR. Don't be afraid to throw some in VIT if you need it, though - you can always change them later.
Vit is like ACC, once you have enough, you don't need it. Once you hit Brayflox NM, start popping points into VIT if you don't have confidence in your tanking skills.
In short; pretty much always STR unless the situation calls differently.

While leveling up, I'd throw all your points into STR. Because you should be able to get gear from merchants pretty easily if you're not getting dungeon drops.
For 50 and afterward, I'd go Vit if you're A. in progression and doing fresh content, thus not being properly geared for it or B. not with a static with group as you won't be able to know your healer's abilities, until well you play with them and that extra Vit will give them a bit of leeway.
As allready said VIT is currently pretty nonsensical. I'm doing fine with pure STR (and a STR right side) which, at i112, is admittedly way overkill for most stuff as sole tank (rnd hard, rnd expert, CTs, rnd trials) in this game. It does get me through pretty much everything that is not an ex Primal or Coil. I have a tank right side somewhere ... haven't worn it in a while.
Though at 250 GC seals (for a Keepers Hymn) the discussion is pretty much nonsensical as well. That's two FATEs in Northern Thanalan to switch from one to another, try it and then switch back if you don't like it.
Aim for enough HP to handle what you're doing currently then Strength the rest of the way. As someone put it "VIT is like ACC."
At the moment because of the mix of my gear I'm actually doing a split of STR/VIT for points. I'm at 10k HP in Defiance, have melded right-hand (STR accessories with VIT melds). As I get better left-hand gear I switch to a larger Strength investment in points.
GLD doesn't get stat points while leveling since it's a DoH. GLA however do.
