How do you do "The Rematch"?

I've been following the kill order (killing mages, the named NPCs, and interrupting Void Summon) but I still can't complete the quest - either the NPCs die or I do.

Is this one of the things where I need to come back at a higher level? I'm 30 right now.

Are you retrying until you get the echo? If you are still loosing with the echo, I'd make sure your gear is up to date. Looking at your profile on the lodestone, your left side accessories are definitely behind. A good rule of thumb when leveling is to keep all of your gear withing 10 ilvls of your current level. Also make sure you are using your defensive and hate abilities as gld. You can also put potions on your hotbar-you should have a good stack from quest rewards at this point.

You can't out level the quest as it will sync you down to 34 I believe since it is a lvl 30 quest. Also after lvl 30 most parties are going to expect you to be a paladin not a gld, and you can't unlock pld until you finish the gld lvl 30 quest. Since you will need CNJ to 15 to unlock pld, you could also take a break and lvl that to 15, which will let you cross class protect and cure on gld which may help. Keep at it!

Yep it quite hard to do "on sight", unless your weapon and armor already on pair with the quest. Good to know you out from there
