The exchange/bonus bit they were referring to (please keep in mind this will be abolished with 1.19) is when you complete a bunch of leves, then head to the counter for new ones after a reset. You are given the option to "exchange" up to 4 leves towards a new leve. Each leve you trade towards a new one gives you between 0 and 2 stars, with 2 being the optimal, obviously. The more stars you get per trade in, the better your reward on the leve you are trading in for. The "bonus" applies to gil or guild marks, not items. So if you had a leve that was normally 10k reward, but traded in some leves, it could bump up to say... 16k.
