Its a tree the first sultan of Ul Dah planted with Thanlan being a desert and it grew so big is some sort of statement on how much Ul Dah has prospered I think.
That's a good a guess as any; they've never explained it (that I recall). All we know is that it's a symbol of the Ul Dynasty's legacy.

If memory serves me right there's also a big-ass crystal inside the Sultantree.
Haven't a source though, so believe what you will.

There is, if your starting city is in Ul'dah. You pick it up in the "Underneath the Sultantree" storyline quest. It is, as I remember, a Water crystal, one of two you don't have to fight a Primal for (the other is the Lightning crystal, which the Sylphs just give you after you rescue their elder by beating the Thousand Maws of Toto-Rak). You get the Fire after fighting Ifrit, and so on. If you start in Limsa, you get it after the fight in Seasong Grotto, and in Gridania, after the fight at Lifemend Stump.
To be more specific, the Guardian Tree of Gridania is the only one explicitly said to have a crystal in it (by the Ixal, though, so who knows if it's true or if they were just told that by the Ascian to make them attack the home of the greatest of the wood's elementals to foster the growing chaos).There is, if your starting city is in Ul'dah. The Water Crystal of Light just sort of appears on the ground after you beat up a vodoriga sent by the Alacran to attack Nanamo, the same way it just sort of appears after you beat up the Serpent Reavers' goobbue in Gridania and just sort of appears when you drive off the woodland creatures riled up by the elementals due to the Ixal's incursion into the wood.

If the Fire Crystal comes from Ifrit...
And the Earth Crystal comes from Titan...
And the Wind Crystal comes from Garuda...
And the Lightning Crystal comes from the Sylphs... who are associated with Ramuh...
And the Ice Crystal comes from the Stone Vigil... which by way of the Dragonsong War is associated with Shiva...
Then the Water Crystal should be in some way tacitly connected to Leviathan.
Warrior of Light is from Limsa Lominsa confirmed! All other "champion" scenarios invalidated!
