I've just reach lvl 50 for my Ninja Job, so I'll be working on everything else. Is this the endgame or is it after I complete the story? Also, what should I look for as a lvl 50?

You'll want to at least finish the 2.0 story (ending with Praetorium) as a LOT opens up. After that it's mostly unlocking dungeons, working on your relic (no reason not to get the ilvl 90 version, though it's understandable to stop there), and gearing up. You'll also want to continue through the story for various other unlocks (you generally need to be on top of the story and major sidequests to do extreme and trial roulette, two of the better tomestone methods.

No. "Endgame" refers to certain content that you can only do after beating the main game. This includes most post-50 gear progression, and higher difficulty raids and trials. Leveling other classes is something you can do at any time, even before hitting level 50, so it's not endgame. Endgame just unlocks new content, it does not modify existing content. The only difference between it and any other quest to unlock content is the quantity of content unlocked.

You can do it! I've managed to level multiple classes with a full time job, hour long commute, and being out of town most weekends visiting people. It may not be fast, but it can be done!
All the term "endgame" means is content that exists for those at the current level cap. That means any content designed for level 50, since 50 is the current level cap, is endgame content. That's all it means.
I highly recommend you continue the main story quest until you finish the entire thing. Unless you finish all of the main story up to and including the part released in Patch 2.55, you will be unable to access the new content of the upcoming expansion, should you so wish to. Getting the main story done now will allow you to jump into the new expansion without having to do then-outdated content first.
Beyond that, the goal of MMO endgame, aside from the obvious "have fun", is to progress your character's strength and run progressively difficult endgame content such as dungeons, trials, and raids. If you like PvP, you might also dabble in Frontlines, or Wolves' Den should you manage to get lucky enough to actually complete a queue.
