In all seriousness, tho, making a gardening mount would imply making something untradable with gardening, which seems... Kinda impossible with the current system where multiple people in a Free Company can harvest crops. Unless they wanna drop that untradable-only mount rule that has been going so far.

I want the dreadnought as a mount. That guy has been in every coil, handing out hi fives like a boss. It is seriously my favorite normal enemy in the game. I want to ride that thing and have the option to give out those huge swinging hi fives to everyone I meet. They could even give him rocket boots to make him heavensward ready.

Oh true, mounts cannot be traded. How about this: You grow like some item that is hard/rare to grow, it becomes a tradeable item "baby rafflesia hatchling" in which can be traded between players (but not market board), then you take that hatchling item to a NPC in a green house, and then several days later you come back and you get a achievement that grants the mount (or the npc has a quest for it with the reward)? I'm sure it could be made to work.

I think it should be more of a quest/task than some item to be sold. It's no fun to just buy it, the people with them should feel attached to it since they took part in growing it (like your chocobo or magitech story mount).

A Free Company could hold a raffle or just use it as a incentive for players to help their FC. Everyone can water it, fertilize it, but then they can decide who gets it. Maybe it should take up a whole gardening patch or something.

Something along those lines could work. Honestly, a mount as cool as that would need some work!
But maybe making it personal-housing-only would be... Idk, simpler? I'm saying as for gardening mounts in general. Cause then you could only do it in your own house, meaning only you can harvest it. That would require a different place to grow the mount, tho, like PotatoTree suggested above, as making a personal-housing-only SEED seems rather complicated... >_>

They could also make maybe community gardens or something, where you'd have a housing ward like area but it'll be a farm, and be able to rent a small plot for a price. They can add more instances if more people want to garden, less if less people are gardening, etc.

Or that. But it would need a filter regardless, so it can't be a FC house item, which seems to be the biggest issue... Maybe add private gardening to FC houses at some point, who knows.
