Jenova actually has a very healthy market.. The reason the low lvl gear is cheaper to buy than make is because people make those while leveling, so there's a large surplus and very little demand since most people can just get quest/dungeon gear that are better. Also.. as for the stack sizes, there's not enough people gathering low lvl mats, so there's only 2-3 people selling each kind, if that.. Usually it's just 1 person. In that case, there's no need to split the stack sizes, it'll eventually sell and it's less of a headache to do it that way. On the bright side, when you start gathering, that means you can actually make some money while leveling, considerable amount.

But having to get all of your own mats as you level your crafting, that isn't exactly the fastest nor the most efficient way to do it.

Just get a combat class to lv 50, then botany/mining to 50 to make some money.. After that, you can just powerlevel crafting by throwing money at them (about 100-250k each for 1-50)
Or if you have no interest in gathering, just get to lv 50 then start spiritbonding for gil, once you make a stockpile of around 5m gil, you should be ready to work on your crafting.
