Because they are trying to do something completely different that they have no experience with.
Because they have not made the psychic class yet, and made their dev team all level it up to 99.
There, my not so subtle hint for psychic class has now made this thread more worthwhile than belgianrofl could ever make it.
I guaran-damn-tee that Blizzard has been doing research throughout its existence. Why didn't SE take a look at what made it's games successful, what drove people away, and what people want? The data was there...
It doesn't make sense that SE would think being reactive is better than being proactive... I mean... any two people having a conversation could have come up with a better game than this.

I'm pretty sure they do research stuff like that. Just because they don't publish their research doesn't mean they don't conduct it. Despite the success behind FFXI, the MMORPG genre is not the same today as it was back then. The massive success of Blizzard has utterly crushed everything and has set the standard for future MMOs. When FFXI came out, WoW didn't exist, the genre was a lot different back then. You can't release something worse than wow nowadays, and delaying your release until it's perfect is the best way to go. Most MMO developers fail at that and I think Square just learned that lesson. All they can do now is work to fix it.I guaran-damn-tee that Blizzard has been doing research throughout its existence. You can't really argue that Square (a Japanese company) failed to research what people want and thus released a poor game into a genre dominated by English speaking players. It's not that simple.
Player polls ARE research
I have to thank Square-Enix for the amazing job they have done recreating Final Fantasy XIV from Scratch. Especially the inclusion of Missing Genders which we petitioned for in good faith. This was proof to us players that the Developers are truly Sympathetic to our requests and that being honest and vocal can pay off with the amazing characters we have who are Female Roegadyn, Male Miqote, and Female Highlanders. Thank You SE, Thank You Community Team, Thank You Yoshi-P.
And consider that most players don't even know what they want. At least this way if an idea fails miserably they can point the finger back at the community :P
FF XIV is missing common features FF XI had or has added since it started in 2002 and that other MMOs have made basic features that every mmo should have(ex. mail). 8 years later you would think theses would be there by default right?
They made 0 research. They were told to go with a mentality of, don't look at other mmos at all because we want to be completely different and avoid being tempted to steal ideas. I mean the old producer, during the development of FF XIV stated he never even tried or saw WOW or something like that right? It's hard to make the best MMO out there if you have no idea of what the competiton is doing or what defines a MMO today in 2011.
The result is a game(FF XIV) that is inferior to FF XI when it first started in 2002.
OR...
They did make some research, and they did have a whole bunch of features, zones, content etc but something went terribly wrong and they were forced to re-do the game from scratch and this is all they could accomplish in time for the release date....(just to give SE a chance here...)
