Pretty new to chocobo breeding, is there any point in getting your chocobo to max rank before using it for breeding and retiring it (it seems you can breed earlier than max rank)?

Not really, no. The only reason could be if you're fishing for a particular skill that you want to pass down, so you could get up to 10 more opportunities. In most cases, just hit rank 40 and retire.
