    whats the most difficult content you can clear as classes instead of jobs?

    t5,59? maybe even t13???

    or are the entire coil stuff blocked unless you equip jobstone?

    No, if you have a competent group, you can clear coil without being on a job.
    Hell, I did t12 as a Archer and MRD on my alt.
