i personally think that games look really stupid when everyone flying around the screen,lol, maybe its just me.We shouldn't talk about the what the game engine can or cannot do since none of us really know the specs, what it is capable of and how it works.
If the current areas do not support or are not designed/optimized for flying mounts, then SE can added flying mounts along with new areas which would be designed from scratch to support flight. Just like WOW did with the Outlands and their first flying mounts.
Down the road, when SE finally starts redesigning the maps like they said they would, then at that point they can also tweak the current maps to support flying mounts.
It's probably not an easy task but how cool would it be to ride a small Bahamut?
What the heck, I used to watch that when I was younger. Some parts are messed up, like how the elves were killed off.I don't think the world structure is well suited for flying mounts. Even with a redesign, I have my doubts it would work right.

But I thought it was a hysterical ending, "I am glad you changed your last name, you son of a bit..." and shots his brother with a gun instead of a spell. I thought the movies was good!
I can say with near certainty that the only other mounts planned in the game currently are Magitek mounts (FFVI style). And those are a long way off.

Magitek mounts would be freaking epic too... but where does that certainty of yours come from?
As far as I know lore wise, Ishgard is at holy war with the Dragonkin, so I don't really see gaining dragon mounts through there likely. That isn't to say that there can't be an entirely different breed of winged dragon(like wyverns or winged drakes) that could be from another continent/landmass(such as the entirety of the Garlean Empire) where there could be tribes of mountain dwellers or whatever that live among said different breed of dragon. Maybe they'd be subjugated under Garlean law and you'd free one as part of a Grand Company initiative for new "weapons of war" for example.
Maybe you'd be able to access new content with them like Wyvern racing or like someone else mentioned, use them as a "hovering" mount or give them combat content. The sky's the limit(literally).
Same sort of concept could be done presumably for any possible addition of magitek armor(which may or may not happen in the first place).
