how do you check how many shards you have and whats the easiest way to get them?

you can go to their nodes (check xivdb for where to find the nodes for each shard) and get them.

Or even easier. Just check your gathering log and then use the skills to detect the nodes. And both miner and botanist get access to them at lvl1.
