How do crafters and gatherer's do combat? I'm level 10 in botany, fishing, alchemy, and cooking now and when I get into a fight as a gatherer I just have to run away... Usually I die instead :P running around level 15-20s while gathering my level 10 mats doesn't work well, even with stealth.

Although any class, even crafters and gatherers, can perform a basic auto-attack, that's not going to kill off enemies unless they're way way below your level. Crafters and gatherers need to avoid combat instead. Easy enough for crafters, just don't do any crafting in places where there are aggressive mobs around. For gatherers, you have Stealth. At this point, Stealth should keep you from aggroing mobs up to level 20. Once you reach levels 18, 28, and 38 on any of the gathering classes, you get traits that enhance the effectiveness of Stealth (making it work for mobs up to levels 30, then 40, then 50). If a mob aggros you anyway (either didn't have Stealth up, or it's too high a level for Stealth to work), then all you can do is run away.
Edit: Oh, and there's a general rule that aggressive mobs stop being aggressive once you're more than 10 levels higher than they are. So once you reach higher levels on your gathering classes, you'll be able to safely wander low-level regions without needing Stealth. You only need to be concerned with aggressive mobs that range from ten levels below you to anything above you. (Not that that helps you yet, when you're level 10 yourself, but eventually it will.)

Ah ok coolI've been stealthing in a half/half zone (I can't remember which one but it's lvl 10 on one side and 20 on the other) the warp in crystal is on the lvl 20 side so popping out of it and trying to look around for stuff has repeatedly ended up with me dieing so I was kind of wondering :P Thank you
How do I edit my profile picture in these forums? I took a look at the my profile at the top there but there's almost no options in there for anything other than a bio and to select my character (which I have already done and isn't actually saying what my levels are properly :P).
When I do the quest to have a choco companion fight with me according to the wiki I need to be in an FC with a stable to train him and while he's there I can't use him for anything... How exactly does that work? Do I just jam him in and forget about him for a few weeks or what?? If he's stuck in there how do I fight with him?

Your profile picture is an image of your character's head, pulled from the lodestone - there's no avatars on the forums. Right now, it's April Fools, so everyone has special Hildibrand questline (level 50 side story quests...all comedic relief) people as their avatars.
There is a quest in Camp Tranquil after level 30 that you do to be able to summon your chocobo companion. The quest is "My Feisty Little Chocobo" from Docette.
After you've unlocked the ability to summon your chocobo, you will need to buy Gysahl Greens to use every time you want to summon them. Each time will consume one, and you'll have your choco for half an hour before you need to resummon.

Gridania: Maisenta <Black Rabbit Trader> - a stall to the west of the main aetheryte

You need an FC stable to train them (give chunks of exp through feeding - which you get exp through battle, so it's not necessary - or change favorite food), yes, but the ONLY thing that does is give them exp without having to battle (or a boost if a special food becomes their favorite) training is nothing special nor is it required.
The only thing you need a stable for is feeding for exp/boosts and changing his color (semi-expensive fruit or gardening, which also requires an FC or personal house). When he's in an FC stable, you cannot summon him until you remove him. You can stable, feed, remove immediately, repeat in an hour. They can be fed once per hour (plus another feeding from another player) for exp, which takes immediate effect. If you were to stable them and leave them there, nothing at all would happen - they'd just be sitting in the stable for no reason.

How do I use a Limit Break? and are they a group use item or a person specific use item? What I mean by that is if the gauge is full and I use it do other people use their gauges as well or if I use it does it use the groups limit break? That being said how do I know if it's being used (other then obviously the bar being emptied) and when I should use it?

The limit break is for the group but only one person can use it at a time. Depending on the role and class determines when it is best to use. Most groups prefer the dps use it to help finish off a main boss in dungeon but a tank can use it to help protect the party from a large incoming attack. Healers can use it to help heal the whole team and possibly revive multiple teammates at once if its at the 3rd rank. Group communication is important for the limit break.
I don't see the "how do I" answer in the post above, so: It's an action found in the first tab of your skills window. It's orange and has two swords crossed. You use the action to LB - you should put it on your hotbar.
You can use it to finish off a boss (generally around 10-15% depending on the boss). If it's a single boss and there's a melee, the melee should LB because they have a single-target one instead of the casters' AOE LB (see below for potencies and you'll understand why). Bards CANNOT dps limit break (they use the healer LB), so if you're a caster/melee and coupled with a bard, you have to limit break.
It's a group limit gauge - when you use it, the whole groups' limit gauge drains. The ONLY place there's personal limit breaks is Frontlines - Slaughter, which is PvP. You know it's used by you or someone else because there's a loud special noise announcing it (kinda like the sound a flamethrower makes, imo), with the bar blinking as it's used, and then the bar drains to empty.
Limit breaks have three levels with increasing potency.
Level 1: Must be in a light party of four to seven players.
Level 2: Must be in a full party of eight players, or be in a light party and engaged with a boss.
Level 3: Must be in a full party and engaged with a boss.
Melee LB: 1. Braver, attack with potency of 2,300. 2. Bladedance, attack with potency of 5,000. 3. Final Heaven, attack with potency of 9,000.
Caster LB: 1. Skyshard, AOE with 1,400 potency. 2. Starstorm, AOE with 3,000 potency. 3. Meteor, AOE with 5,400 potency.
Tank LB: 1. Shield Wall, reduces damage taken by party by 10%. 2. Mighty Guard, reduces damage taken by party by 20%. 3. Last Bastion, reduces damage taken by party by 50%.
Healer LB: 1. Healing Wind, Restores 25% of party HP. 2. Breath of the Earth, Restores 60% of party HP. 3. Pulse of Life, Restores 100% of party HP and raises all dead members (RADIUS. This is a radius. You have to be near people for it to raise them. I once had a bard use it while I was trying to position myself to raise everyone...raised no one, empty limit gauge. Not fun.)

Thanks guys! I kept looking for the damn button at the top of the screen where the bar is :P I didn't realize it was an action I have and use on its own from my bars :P Definitely see why I need to put it on my action bar thank you
Browsing the forums I've seen a number of people saying they do the best dps. If there are no addons and such and I can't find a meter in the game how do you find out who's doing the most damage? How do you find that out? I'd love to know so I can get a proper rotation sorted out.

Parsers. However, they are against the rules. You won't get banned for using one but you will get banned for talking about them in-game. It's a "don't ask, don't tell" policy. They changed their "they're fine" stance on them because people were using them to harass others and whatnot. I'm too scared to use them, myself. Kinda scared to even mention them. >.<
