It is a fun fight. It's just making sure the other 7 NPCs stay alive that makes it frustrating.
Well, not mentioning coil or a primal fight I have to say the Midgardsormr battle at the end of keeper of the lake is pretty fun.
This is gonna sound really weird because it's a dungeon, and none of the dungeons are really that hard once you learn them, but I love The Stone Vigil. I wish there was an Extreme version of dungeons just so I could play an EX version of The Stone Vigil, but it'd also be pretty annoying to unlock that many dungeons again lol
This is an odd one to answer for me, so I'll post my top 5 fav fights.
Titan Extreme: It's one of the best fights to practice cast clipping, and is just generally fun.
Turn 3 of the Second Coil of Bahamut (Turn 8): A giant Target Dummy that has whimsical, yet fun mechanics...
Turn 2 of the Final Coil of Bahamut (Turn 11): Pretty much encompasses Titan Extremes Cast Clipping and Turn 8's Target Dummy freefire. Tethers are also really, really enjoyable.
Turn 4 of the Second Coil of Bahamut (Turn 9): A ton of mechanics and a ton of ways to optimize it. Love having to be aware for long amounts of time
Turn 5 of the Binding Coil of Bahamut (Turn, err, well, 5): Another fight that could be broken into multiple bosses, this boss teaches newer persons to build an awareness that later proves to become invaluable. Joining PFs is always fun–whether it be from groups who can't pass divebombs or making a few happy with clears, it's never a dull moment with PFing Turn 5 lmao
A lot of stuff in Coil is fun if I didn't have bad people in DF. XDDDD I must be a masochist.
I actually like to use my pea brain and single infant brain cell to TRY and think about mechanic's.
It's a struggle but the people put me in overdrive. Can drive even the sweetest Lala into a murderous being.

I wish that I didn't have to do the whole Keeper of the Lake dungeon and could just queue up and do that fight over and over~
