Has anybody got the platinum trophy, or the equivalent on PC/Mac?
I've been thinking about trying for it as I will no doubt get a taste of what most of the game has to offer. Though it looks pretty time consuming doing so many things 1000 times!

There is actually a metric for this? What is involved?
We don't have trophies on PC of course, though i'm assuming there's probably an equivalent in-game achievement.
I'm just missing 1k leves and T5 clear.
Crafting 1k things is actually pretty fast when you quick synth full stacks of stuff. Counts towards my lumi achievements too (wayyy more of a grind than just 1k items. xD )
eta: I wonder if we'll get new psn trophies with the expansion...
The platinum trophy is really easy to get actually. Here's the list:

The platinum is barely scratching the surface.
Get the real achievements done. That is tough work. Plus the non-achievement goals: all minions, all mounts, completion log for every craft, etc
If you mean like, actually everything there is to do, I don't think that's possible.
Just for one simple example, you need to win a million GSP with the mini cactpot for one of the achievements. Even if you somehow won 10k every single day it's been available (and you're lucky if you even get a ticket that HAS 10k on it once a week, let alone win it), you're still only at about 220k/1,000k on that achievement.
You also can't have all the TT cards.
You also are unlikely to have every drop available from T13.
So I guess the possibility of "completing FFXIV 100%" depends on how you define it. But even getting all the achievements would be extremely difficult, and as of right at this moment, impossible.
People got the platinum trophy AKA 100% on FFXIV in like 2013.
I don't think anyone has got the Who Wants To Be A Gillionaire? achievement yet.

Yeah, the platinum trophy is pretty easy honestly. I got it a very long time ago, not exact on the date but definitely very early 2014. I do remember the last thing I needed to do was fish 1000 times. I literally did everything else first because fishing is probably my least favorite activity in this game (not much of a fishing fan irl either)....
The 1000 leves wasn't as bad as it sounds if you level all your crafters with levequests. You don't really even have to go out of your way to get the rest you'll need once you do that. The only time-gated part of that equation is your leve allowances needing time to work back up.
Like Sadana said, crafting 1000 things for each class is super simple. Quick synth a very low level craft in each of the professions until you have it, or work on the luminary by tracking your progress on the in-game achievement screen and craft accordingly. It will obviously take much longer if you try to go for the unique craft achievements in each disciple...
But yeah, there is no way to speed up fishing 1,000 times. I'm pretty sure I just watched Netflix for a few days on my tablet and turned off BGM on my TV and listened for the tug on your fishing line to initiate. I would work on this gradually while doing other things, like waiting on queues or something. If you do it all at once like I did, it will get very boring VERY fast.
List of least entertaining activities in game for me:
3) Wiping in low level dungeons after I have taken the time to explain mechanics
2) Casino shouts since /random has been a thing
1) Fishing
FFXIV was my 39th platinum trophy (I'm somewhat of a collector) and it wasn't near as bad as some of the other ones I have (see: WKC platinum, took about 1k hrs)
Trophy hunting on an MMO... lmao! Get Real.
