Ok, I cannot test right now, but I looked up a few things.

The macro to stop casting was this one:
/pac Steady
/pac Guard
/pac w/e action

This makes sense, as both are 2 sides of the same coin (technically this only matters to SMN pets, but seems to have an impact on the faires actions as well in terms of stopping the cast), whereas Sic/Obey would be the "other coin" (auto-everything vs. only-auto-embrace).
I can't see your mentioned macro work at all when I think it over.

Have you tried switching the above macro to
/pac Guard
/pac Steady
/pac w/e action

I've found eos has been great with queueing skills now. Been running without macros.

Those were the best macros to use, but they no longer work as of patch 2.5.

EDIT: patch 2.5 added the ability to queue pet skills.

Which works very clunky in my experience, I have a feeling it's outright broken if there is a target below 80% treshold.

I agree, it often doesn't work well, but at least it is there.

but if everyone is already topped off, then your fairy won't be casting :P haha, so you won't need to interrupt.

My dps macros make eos heal target of target (main tank), so, it helps me ^^

Its just how I like to play though, so not everyone needs to use it.

Edit:
Pet Cancelling isn't super important, you'll still be able to endgame content without doing it. I find it very similar to fire weaving for blm.
