I think people have really covered the difference in play style for the two it's pretty much burst vs sustain and it really depends how you like to play. Both are good for all roles including PvP just different. In a Raid the WHM will be able to pull off a lot of big burst heals with longer CD's so when large damage hits they can heal everyone up quickly. The SCH will look to reduce the amount of incoming damage and also protect the main Tank whole the WHM can keep throwing HoT's on the Tank. In a boss fight the SCH will likely do a lot more of a DPS switching role while for trash sections the WHM can do good burst damage with it's Holy attack which is an AoE damage with an AoE stun on it so they can stunlock and damage large mobs making it easier to nuke them down. They also play this role for add phases on bosses.

For PvP it's more or less the same do you want to play a tooled up Healer role or a Healer/Support role reducing damage and applying DoT's on enemies? A WHM can throw out tons of different kinds of healing skills from HoT to huge single target and group heals for any situation but doesn't have as many DPS skills and only a couple of damage mitigation skills while a SCH has some cool skills like Shadow Flare and Sacred Soil for group DoT's and damage mitigation.

These are just basics in the role they play it can vary between groups. I play WHM and how it play can be very different depending on the dungeon and what I'm partnered with. With a SCH or with a WHM both work just very different. I enjoy having a switched on SCH around who prefers to take on the role of raising any dead party members so i can concentrate my mana on throwing out heals whole they mitigate damage and sustain DPS i'll have plenty of mana for add phases that require them to be burned down in a group.
