Yeah it's... really kind of bad.
One or two don't look half bad; this is kind of how I'd like more of the Monk weapons to look, even though it's far from perfect. More "slid overtop of your hands" and less "weird club weapons"
(This is the Hellish Claws, from the initial extreme primal triad)

They are straight because that's how strong the steel is to make them. If they flopped up and down then they wouldn't be very strong would they?
Also OP, if you want to get them changed why not draw how the models could hold the new monk weapons? It's all well and good to complain but it takes dev time to do something like this. Personally I would like that dev time allocated to actual content, but if you take the hard work and show the devs how they can animated it the way you want it animated it may take less time.
Least the monk weapon in the pax video doesn't look too bad imo :/

The link shows an example of a real historical katar. So they are representing the weapon correctly. As to why they don't flop around they are designed to pierce (which is my bigger problem with these weapons as they deal blunt damage still for whatever reason) not slash, so think straight punching and not so much haymakers.
That being said I too don't like the design and suggest they should make it less realistic since you know...dragons, fairies, magic and all that jazz.
If I'm not mistaken, physically the knuckle weapons need to be either attachments to a closely fit grip that forms an extension of your knuckles, or they need to be attachments on full gauntlets---the gauntlet itself is the fist/knuckle weapon. Weapons where the grip is just a rod/straight handle, the weapon itself will swivel in your grip when you strike.
Yet many of the fist weapons in this game have just a straight handle with the striking ends attached to the outside ring that does not come in contact with your fist. They really don't look credible.
I'd say the best solution would be to develop gauntlet type weapons that has a model replacing the glove model, and while "sheathed" the glove models are shown.
Notice how it has two bars for grip. But many in-game models only have 1 bar, if I'm not mistaken.

Oh god yes, some of the monk weapons look great, but then you get down to the handles and think..why? If I wore these like a pair of gloves it would be WAY better.

It's weird, because most of the low-level stuff is all actual fist weapons that just look like brass knuckles with varying degrees of fancy bits on them. Those I like. These endgame ones I do not.
Need to steal an idea from WOW and have some super-minimalist fist weapons that are just brass knuckles or boxing tape that you can use for transmog purposes.
The majority of them are based on the larger and some times longer Katars:
What you're suggesting is more on line with the much smaller Push daggers/knives or shanks:
However, all the weapons in the game are very oversized to make them look more dynamic. Otherwise they loose much of the detail and gravitas if they were all scaled down to their proper sizes. But I would like to see more, knuckle and glove/gauntlet styled h2h weapons just for the variety.
