That's because the fights are scripted, you can memorize what's going to happen and start reacting to the mechanic before it even happens. That's how people who had lag beat Titan EX, they would start moving out of mechanics before they even appeared on their screens. This would be impossible if you had to see the mechanic first before reacting to it.

For example, I have enough lag that when Bennu appears it is already going straight for our WHM even while it's just the name and Bennu is still materializing. I know this is going to happen, so I am already doing Skull Sunder the moment I can select Bennu even though it hasn't even fully appeared yet. Sometimes my Skull Sunder goes off, I see the damage number over Bennu's head, but it still takes off for the WHM and then turns around halfway there and comes back to me. That's how laggy and unresponsive this game is, and I'm on the West Coast US. Timing and reaction based fights would be literally impossible with this kind of inherent lag.
