The Lore Panel said that the vast majority is illiterate so I think the closest thing we have to schools are guilds and yeah.. because you can have is being taught a profession.

It is most likely because the player character is literate.

While the majority of Eorzeans are illiterate due to lack of education unless they are nobility or any type of important people, the adventurers are most often self trained or trained to be literate.

Of course the entire "not providing origin story" part of this game is to let the player create their own background for their own character so don't expect a explaination from SE on why our character is literate.

Other than a few guilds, such as the arcanists and alchemists and such, education is hardly held in high regard or seen as important to the average Eorzean. Most are completely illiterate and could barely spell out their given name. And while adventurers such as ourselves seem somewhat educated, it could also be constructed that we simply say very little and act as a third party for almost all our interactions, so it's showing neither an educated individual nor uneducated.

It is true that we deliver letters, get asked if we read them and we shake our heads and they tell us... I however would like a school blazer look... And more tall sock and short skirt options. SCH skirt is awesome, but why limit to SCH? The eerie tights are actually awesome in the same way though.

What I'm pointing out is, when countries in our world do literacy census, they often base literacy around "working literacy" (I believe the US considers an 8th grade literacy to be working literacy, so an adult with a 4-th grade literacy would be considered illiterate, while still being able to read and write simple things). So it's possible that people in Eorzea might have learned some reading/writing at home, or even in a school, just not at a high enough level to be considered literate. They might be able to write letters, but wouldn't be able to distinguish among more high-level vocabulary and comprehension.

Keep in mind their society is not like our society.

They do not have elementary school, middle school, and high school like our society so majority of their education must be from a tutor (which is only affordable by the rich and there are very few due to these tutor must be personally trained) or self taught while some societies do have a Academy for teaching people education but is restricted to Noblility.

I would go into details but a better understanding on how their Society works is best shown in a World History class to learn how a Monarchy, Oligarchy, Theorcracy, and Authoritarianism

Well you have to understand what type of society each city state uses to get around how much education is obtained by their citizens.

Ul'dah uses a Monarchy.

Ishgard uses Theorcracy.

Gridania uses a Oligarchy

Limsa Lominsa uses a Liberal Democracy

Then you must also take into account what is the state of their cultural development.

With the currrent state of things Ul'dah has the least amount of people who can afford a education and they would be lucky to even get 1 lesson a month.

Ishgard focus of education is their religion so their citizens may be getting a decent amount (maybe 1 per week) but only about their religous beliefs while higher members of their society obtains more proper education.

Gridania has shown that they do provide education to all ages no matter their society level.

Limsa is the unknown for now since it remains young and not much is known yet if they have set up a proper education system.
