Log into one of your characters and make some change in the UI or settings, just to make sure the game saves that file to remember your change. (You can change it back later.) Log out of the game (without logging into any of your other characters) and take a look in each of those character folders. Hopefully, the character you were just logged in with and made a change to should be the only one whose files were updated, so you can check the file time to identify which it is. The folder with the most recently updated file should be the character you were just on.

If the software does something really bizarre, like saving all your characters' data when only one of them had changed, then I guess you could resort to trial and error. Move one visibly obvious UI piece to a different place for each of your characters, then log out of the game. Copy all of those character folders to a temporary place (just to preserve each) and then copy one after another's UI layout to all your characters. Logging into the game to see how it looks would let you learn which folder name corresponds to which of your characters. Rather cumbersome initially, but once you learn which folder is which, at least updating for any future changes you make would be simpler.

I don't have the PC version, so can't try these, but one or the other of those should work (hopefully the first one).
