If it is like the first 3 events after 1.0 launch (without the bells), the recipes would be still ingame after the event, but the mats would be only buyable during the event.

So stock up on the Young Dodo Roaster & Dodo Stuffing!

The old santa gear is still obtainable from a NPC ingame, if you did the event last year.
Not obtainable (not even in the cash shop) are the old event crafting mats from 2010 that were needed for the santa gear recipes.
Dream Hat Materials, Dream Tunic Materials and Dream Boots Materials.

also the mats would not dissapear, only the option to get them from a NPC ingame (I'm sure they would be still tradeable in the MB)
