I don't understand how the wedding reservation system is supposed to work, I wish they would explain that better.

That's explained here. Basically, you go in a party with your partner to an NPC starting at a certain time on Friday morning (or thereafter), and you can pick a two hour block on a first-come, first-serve basis.
