there is one thing that is confusing me. Do i level my gladiator to lvl 50 and then change to another class to pick a job or do i change class after lvl30?
My main goal is to tank.

I think it's once uve done the lvl 10or 15 class quest on ur first class. Then there will be a quest to start the other classes at the guild.
you'll be able to switch between class when you hit lv10 for 1st class
to unlock your job, you'll need to level that class to 30 and job's subclass to 15 and then do the class quest until you got soul stone, then tada!
Once you complete the level 10 guild quest you will have the ability to change your class but visiting any on the other class guilds in the 3 cities. In order to obtain your job you will need to have leveled your class to 30 completed all the class quest from your guild and leveled the secondary job to level 15. So in your case I'm assuming you are leveling gladiator and want paladin. Just get your gladiator to level 30 and do all the gladiators guild quests. Then go to gridania get conjuerer and level it to 15 and then you can go and unlock paladin.
Ul'dah's Most Wanted is the class quest to complete if you started as a gladiator. After you finish this quest, the npc (Mylla) will suggest you take a look at the other guilds. You can visit the respective class guilds and complete their quest to unlock the class. You can do this for all 9 combat classes, 8 crafters, and 3 gatherers, and switch at any time you wish between them.
So you can spend 1 hour leveling gladiator to 33, craft yourself a suit of armor with armorer in 10 minutes, make some money as a miner for 20 minutes, and then go back to gladiator for a FATE you happen to see while mining.
If you wish to become a paladin, you will need to first travel to Gridania and complete the Conjurer's quest, My First Cane). You don't need to do the class quests for this class, although they are heavily recommended as it provides you with equipment, and abilities (including cure2 at lv.30). For the time being, you only need to level Conjurer to 15 and Gladiator to 30.
After you finish the lv.30 gladiator quest, Rematch, and have a lv.15 conjurer (no quest needed, just the level), you can access the Paladin quest, Paladin's Pledge.

As mentioned, you'll need to get Conjurer up to at least level 15 to unlock Paladin, but in addition, you should also unlock Marauder and level it up a little for some useful cross-class skills. Within just the first eight levels of MRD, you'll gain access to four cross-class-able skills useful to your Gladiator/Paladin. Then there's another once you get MRD up to 26, but particularly those first four are nice low-hanging fruit so to speak, as it doesn't take long to get a new class up to level 8.
