What I don't want: wide variance in the appearance of a piece of equipment between genders.

What I'm okay with: way less flowy, capey, skirty stuff.

I wear the Sentinel set on my paladin for this very reason... it covers me from head to toes in functional mythril armor, and doesn't have extraneous bits to get sucked into jet engines or revolving doors.

Especially as a Tank, why do every of our Armor are dress like? They look good on Female, but not so much on Male Characters. Are they doing this so they don't have to re-work the armors for both Male and Female? Personally, I would like different variety, even change the look of what it look like on Male and Female. Other MMORPG do this, it add more unique to the gears.

Tank Armor beside Artifacts have all been Dress Like Gears. I don't know, but it would be great to get different variety of gears in the future. I'm tired of seeing trend coat like Snow Gear in this game.

So far, the only less dress like are Artifact Gears and some crafting gears. Also, more Gear like FFXI please

On a more serious note. The armors we've been unearthing and reforging mostly come from one culture. The Allagan Empire, it makes sense that there would be similarities among the sets, while still having obvious discrepancies because of the different ranks of the Allagan hierarchy.

Hmmmm... dunno about you OP, but I LOVE to look like an elegant baus while tanking. Heck, to be honest, I like all the robe styles of the various job classes. Its an intentional art style that translates with the theme of Eorzea

And like Felis very rightly said, they are long coats (+1 to you for that)... the coats are generally also referred to as surcoats and have been worn by knights and elite mounted calvaries since the 12th century. Also, any self respecting Final Fantasy fan will realize that this long coat style has always been one of the main styles traditional to the series.
