It's probably safe to say they succumbed to the wounds inflicted upon them by Gaius as he hit them square in the chest with a surprise attack.

They did answer to this actually, and pretty early in the live letters too (at least regarding the reasons to not bring the Path Companion back, not the lore reasons).
The main reason was that they felt that with the chocobo companion, the path companion was no longer necessary, plus, they said they had preferred to substitute the path companion's participation in instanced fights with the presence of other NPCs specific for each instance (like Thancred/Papalymo&Yda/Y'shtola in the lv5 MSQ battle instance, so to speak). Because of chocobo companions and other NPCs who heal and aid you in battle, the path companion is no longer a necessity.
Sorry, could you reference the link please? The closest 3rd letter I find were actually dated from February 17, 2011:From the Third Live Letter;
They removed it temporarily only to realise chocobo companions were more suitable due to the lack of open world content, and made the removal permanent.
ARR changed direction with a HEAVY focus on instanced content vs. open world content, making it so that the NPCs in the story-line would support you instead of a path companion (healing/tanking/damage).

At a glimpse, there's no mentioning about the path companion there. Not to mention that the live letter are 3 years old.![]()
They're dead. A piece of dalamud smashed into them while recovering from wounds.
While on fire and bleeding, they stumbled out of the ALC's guild only to get trampled by chocobos fleeing the city.
Then, they were eaten by goobbues.
You're looking at the wrong thing that's; "Letter from the Producer, III (02/17/2011)"Sorry, could you reference the link please? The closest 3rd letter I find were actually dated from February 17, 2011:

Almost all of these requests/ideas were actually implemented, such as DX11, Ninja/Double Barrel Gun Class/Currency Redenomination

I've watched every live-letter since the second one that Yoshi-P did back in 1.0 and I'm struggling to find the exact live-letter that I'm also thinking of (there's quite a lot and seeing as it's not in english its very hard to find direct/quotations/references), where they discussed their actual reasoning behind using the chocobos instead of path companions, but it boiled down to "They no longer fit in the story, chocobos were easier to design/gear".
In a sense, the chocobos were the better open-world choice, considering they're quite 'robotic' and scripted to make the NPCs with you feel more believable and not just a robotic slave on a leash would taken a lot of work.

lol If you had provided the original citation, I wouldn't wondering about this myself... ^^;
BTW, I already found the original text saying this rather than the long youtube you provided:

He did say though about the revival of path companion, although no specific yet. But hey, at least parley are indeed making returns in form of mini-games found inside inns.
These "companions" were replaced by the Grand Company Chocobo companion, Grand Company solo content, and Retainers.
I'd rather have retainers, chocobos, and a tiny party to lead on my own rather than a single companion. It won't be missed.
If not Path Companions, I would love to have Milfilia follow me around...
I really miss mineplease bring them back.
It may seem silly, but I refuse to use my chocobo companion. I never really liked chocobos.
