We should already have those. I dunno, I haven't checked in a while.

Sounds like Guild Tasks but I guess you're talking about doing the whole task of getting and making the items in that time?

Sounds like Grand Companies.

All for some AF style crafting gear.

I like the idea of mini games as a gil-sink. Like some sort of card or chess game to pass the time. Maybe even with collectible pieces or cards.
the npcs are supposed to be in the area so that people can buy the gear to do the quests (which would also act as a gil sink since a lot of ppl would drop them when they are done).
And yeah its a bit like grand companies but for crafters and gatherers, with the sole purpose of making it nearly impossible to ruin markets via botting while at the same time promoting socialization and creating long-term goals. Psychologically if people decide to invest 20 hours into getting these points, it is likely they will continue returning to the game just to get that item that makes them an 'elite' crafter.

and yes, the tasks are gathering the items (you might need 2 items from a tree and one from a rock) and then crafting the item. The idea here is to have you doing different things so it doesn't get boring and repetitive (to a degree) and making it difficult for anyone to write a bot that can do it automatically.
