Hi I just started playing the game a few days ago and was wondering if I could just play as one class till I hit 50 then level up the other classes since I wouldn't want to waste quest exp.

Yes that's perfectly fine to do so. Although I recommend getting your subclass to lv15 to unlock your job at lv30. Once you hit 50 however id also recommend leveling other classes for cross class skills.
Yes you can, BUT you won't be able to change your job since it requires one class to be at 30 and other one at 15
for example if you want to play as scholar, you'll need to get to lv30arcanist and lv15 conjurer.
about the quest exp, you won't have to worry about it much since you can just level up your 2nd class with F.A.T.E./Dungeons since you'll gain additional 50% bonus for most thing you do.
Ah ok so its similar to Eden Eternal. Thanks for the info.
Edit: oh also is there like a fashion shop in this game?

Not sure if you mean a real cash shop. There will be one added in 2.4 with old seasonal event items, 3 new minions and a mount.
There's glamours in the game to change the appearance of gear which are unlocked at Level 50. There's a whole bunch of vanity gear to glamour to along side regular armour.

As for quest experience, a lot of players save sidequests to use for leveling later classes, doing just the main scenario with their first class. If you do that, however, you should be aware of which sidequests actually unlock features or content, since you probably won't want to put off those ones for long. This wiki has a good guide to those feature/content unlocking quests.
Thank you all for the information!
