I remember reading at one time, the idea of adding crafting stations and gardening to housing. Was this ever done?

What can be done in housing atm?

Both were done. Crafting stations can be made for houses that boost your xp I think up to level 40. Gardening plots are available to grow stuff as well. Also, there are stables for your chocobo where you can train (gain xp) and dye them.

Also you can add aetherytes, mailboxes, vendors, and I believe a summoning bell.

They bost the cp (not exp)by 10 for everyone below 40.

ofc you need to be level 50 in order to craft those tables

so the people that would use them need to buy them or have a friend craft them for them. They're more useful in FC houses where there are players of varying levels.
