We have:
Ifrit = Fire
Shiva = Ice
Ramuh = Thunder
Titan = Earth
Garuda = Wind
Leviathon = Water
We have no elements left. The dev team has spoken to moving away from the "primal threat" as a main storyline piece, so the likelihood of them continuing to introduce Primals (at least in the lore context of the game) is low.
However, I think it is very likely that in 2.5 or 2.6 we will see something omnipotent to bring the primal storyline to a close. I would imagine something like Tiamat in 2.5 and some portion of Bahamut's body to fight in 2.6.
In 3.0 I'm betting on things like Fenrir, Alexander, etc will be introduced in much the same ways that primals have, but as something NOT a primal in the lore context of FFXIV - they seem fond of the trial system. I could see Alexander as a Bahamut-esque figure in 3.0 going along with the religious aspects that seem to be associated with Ishgard.

Raiden - more extreme trial version of Odin
Four fiends trial - from IV, would be pretty cool to have to get in some kind of tag team fight where they randomly join in and start mixing up the elements.

After reading some of the previous posts and posting my top 3, I'd like them to keep with having raids along with "trial" fights. It helps give some nice variety to the end game scene having fights that you can spam throughout the week with people in party finder or friends in FC. So if they move away from the primals like some of you have mentioned I'm sure they can just call them something else moving forward and keep adding more. It'd be really sad if they moved away completely from releasing trials like these. Shoot just call them summons if need be so lore humpers can breath a little and relax.

I believe they are called primals because they are the basic elements. Hence why, for example, Moggle Mog is not considered a primal. However, the method of calling upon a deity-like being like Moggle Mog could certainly apply to previous summons, but that wouldn't make them a primal.

There is already a monster called "Valefor" in the Labyrinth of the Ancients. It looks like the AK last boss.
No for any Ivalice Zodiak demon/esper. They need to come along with Zodiark when he finally shows up to defeat the fake allagan gods.
