I recommend a typed command. /cancel or something of the sort. Also while on the crafting topic is anymore work being done on the typing while crafting thing? I hate getting interrupted while trying to type when I am crafted every few seconds, this has got to go.

Click on a check box in crafting window makes a option on bottom to cancel.
for keyboard only people like me pressing a specific key turns the check box on/off like "End" key to End/Quit crafting.

at least that key I know I don't press as often as the Esc key and can't say I pressed it by mistake! + have to choose option after checking the box to actually quit.

I definitely want the option of throwing my crafting station across the way when things start to explode.

Add some normal way of canceling, like esc for keyboard users, and then have a pop-up confirmation window. For mouse users put some X to the top-right like suggested with same confirmation pop-up.

A button hold sounds good for Gamepad users, like someone mentioned. Have the cancel option be an option in the craft menu and you have to hold confirm over it for, say, 3 seconds?

Actually thinking about it, none of the other gamepad buttons are used besides confirm and cancel. Just make it so we have to hold down the active/passive mode switch button to give up a synth on a gamepad, or something like that.

if you want to make it absolutely foolproof on PC you can make it a slash command for now...

    /destroycraft
    /tablethrow
    /doover

maybe not the last one, but something like that ^^

edit: oh and make it so when the bar times out your text box isn't destroyed or else my idea weakens.

A menu option below Careful Synthesis and above Wait would work. Just add a confirmation dialog box after you press it. Alternatively, holding the cancel button for a few seconds like someone else suggested might work fine as well. Either of these would be harder to accidentally trigger than the dozen or so times I've inadvertently aborted a synthesis by starting Firefox when an update was ready to install.

Not trying to be an ass about this, and since I don't craft much maybe I don't have an opinion, but wouldn't a terribly failed synth be enough to tell you that you you shouldn't try it again?
