So very true.
I'm quite disappointed with these little huts with 30 mobs surrounding them. I expected a whole region such as examples you pointed out.
Same issue with the npc settlements as well and camps.
They all need to be redone.
It's more frustrating to have something introduced not meeting the expectations than not having anything at all.

PS. Though i do recall reading strongholds coming in future, even settlements could use more size, detail and creativity.
