Because :I can't speak on it either way. There hasn't been any conclusive evidence it will be STR or DEX, so essentially people have been smart and collected both over the last couple of months. If you haven't started by now, I wouldn't bother past i90 accessories.
People like using Fuma gear as an example, but nothing is stopping SE from creating similar looking gear, tossing DEX on it, calling it something else, and giving it to Ninja. We've seen this happen very recently with Guardian Gear from Syrus Tower for DRGs and MNKs (two sets of similar looking gear, but different stats).
1. There is only 1 set by type of class : Tank, Heavy Melee(DRG), Melee(MNK), Ranged (BRD), Mage and healer, putting another set of Dex would make it have 2 Dex gears while there could only be one.
2. Dex is for ranged attacks.
3. Yoshi already stated that NIN will be melee and therefor we can guess what gear it will wear.
Surprised nobody has mentioned saving up tokens, either Rowena or the first set of EX primals
I remember reading it awhile ago in a Famitsu interview but I either misread it or it was mistranslated at the time. The only thing I can find is him saying he wants to keep people guessing. I'll edit my post.

I keep telling myself I need to prepare for Ninja. I will probably cap Soldiery tomes, UAT & some oils/sands. Other than that, I think I'd prefer to earn my gear whilst playing Ninja.
I don't want to "complete" it as soon as I hit 50. I know there will be more content and a higher iLvl once the patch hits but I just want to enjoy the journey.
How about saving up gil. I'd imagine crafters will sell relic starter weapons at a very high price due to demand
Yea and I imagine at least getting the materia for it now would help, might be Savage Arm III (MNK, DRG) or Heaven's Eye III (BRD) if they follow the same route for the relic.
1) Read the "People like using Fuma gear as an example..." again.Because :
2) Means absolutely nothing. It's just a text box that states that DEX affects Ranged Attack damage. You, nor I, nor anyone else here knows if Ninja's attack system will follow a new damage calculation/formula, one that's effected by DEX (or STR, or INT, or whatever they want). If it does, you can bet your buttons they'll change the tool tip to reflect this.
3) Lets clarify this here:

Naoki Yoshida, producer: First off, because the class is going to be a melee DPS-type class, that gear that you have for other melee DPS classes and jobs is probably something that you'll want to hold on to. On the other hand, weapons are all going to be new because it's going to be a special type -- the dual wield. While you can use existing gear, the weapons will be all new and players can have fun collecting them. As for the special and Primal weapons, there will be rogue and ninja versions
Taken from Massively. While he does state that it will be a (very obvious) melee class, he does not specifically state that if the main stat is STR or DEX at all. There are sets of gear that share both STR and DEX stats in game -- various pieces at all levels up to 50. It isn't until you get into the iLvls that you see specific pieces of gear that's geared towards a specific stat. For the purposes of leveling up to 50, he encourages everyone to hold onto your gear.

Stay tuned for more info (laughs).
Is that a level 50 action?
Yes, a critical hit to the neck, that seems ninja-ish! Please try also using it on small monsters like ladybugs and let us know what you think (laughs).
I know it’s a dual wield job, but will you use two weapons like you did in FFXI?
It’ll be different. Even though it’s a pair of weapons, it will both be together as one weapon. You won’t equip each one separately.
What will the main stat be?
I can’t discuss it yet. It’s also possible we’ll change it from what we’ve already planned (laughs).
Taken from the joint interview with Famitsu during E3. He states it right here, and calmly implies that Ninja main stat can be whatever they want it to be (or change it from whatever they planned). Ninja's main stat isn't bound to the STR stat as people are assuming.
