Your description has me pegged as a hardcore raider, but I definitely identify moreso with being a casual non-raider. I'm not opposed to raiding and I love doing it whenever I can, but many raiders are just terrible people with really short tempers and an amount of patience that wouldn't even fill a thimble.
Also, even though I play almost 30 hours per week on average, I'm mostly going at a gentle pace with content. I don't grind all that much unless I have to, and even then I don't devote more than a couple hours to the cause per day.

Based on your categories, I'm a hardcore raider - though I do much, much more than just raid. I do more or less everything in the game - crafting, gathering, gardening, currently working on making an i95 Moggle Mog weapon - except PvP, since I've never been a major fan of it, but I love tackling increasingly difficult encounters and getting new loot. Now if only RNGesus gave me more loot for my main job rather than throwing every single piece of loot for my secondary job at me... ;-;

Hardcore non-raider
Never been much into endgame content, usually only try to clear it after it has become irrelevant or I have nothing else left to do.
I'm not sure casual, moderate, and hardcore are good categories to break down the populace into because hours played doesn't really say what they enjoy doing in the game. Additionally, if a player jumps on and does dailies and some light stuff here, but then spends another eight hours playing other games, does that make him a casual player? I think the terms themselves lead to confusion on the part of different parties, so I don't really support breaking people up into those categories.Pretty simple. You're to choose an option 1 and an option 2.
I'm a hardcore raider.
Option 1
Hardcore: Play 20+ hours a week
Casual: Play less than 10 hours a week
Moderate: Between 11 and 19 hours a week
Option 2
Raider: Does anything that interests them
Non-raider: Does anything that interests them excluding raids
I've found that many, many player just label all non-raiders as casuals yet are at a loss for words when I tell them there are players who log in 9 hours a week for when a new raid is out and 2 hours a week when they have that raid on farm.
Perhaps from SE's point of view they would be casually playing FFXIV:ARR, but that does not determine whether they are a casual player overall. Plus, its more of a market/business term than a good game development term.
Also, I feel the raider/non-raider term isn't really that helpful. It would be better to know the motivations for why individual players play the game because that can provide more insight into their choices to participate in or avoid content.
And I agree that labeling all non-raiders as casual is a gross over generalization.

I'm what my friend calls a casual elitest. I go with the flow, chill around and kind of do nothing a lot. But I strive for progression and have a eye for criticism and don't mind helping people at the same time.
Not to say I don't gather or craft. I've got 1 Novus and 1 Supra[gathering] and enjoy both healing and mining.
I follow the idea that if you're gonna play, find friends to play with. And if you're going to do nothing, do nothing with friends to make it something.

I've had good friends go from friendly and polite to downright ugly because of "true" endgame or raiding with a bunch of %$*&. I in no way want to become like them and even the few times I did test out the waters it was not fun. Nothing but gripes and people flinging insults at each other, not how I wanna spend my time on something that is suppose to be a game.
