Just by virtue of how old the content is, the majority of the playerbase is going to outgear it by miles anyway which is going to have a big impact on how new players experience it. If you want to really experience the fights in the way you're asking you need to make your own group with clearly defined rules of who can join or else you're right back to square one.
Using Duty Finder and moaning when the overgeared players destroy the content is silly when SE added Party Finder specifically to combat situations like this.

One person won't hold back a group of overgeared players. Not even 2. Maybe 3. Its on the tank or whoever pulls to make sure they know what the party is comprised of before they pull. Its not that hard, half the time you just gotta look at gear or check how much HP a player has. If you want to learn the content, watch a video before hand. You'll get carried through and should still know what's expected of you. And if you die, then well, you know you done f'd up. Because there's no way you should be dying in Ifrit, Garuda, or Titan really, unless you can't dodge. There should be more than enough DPS to make it past heart phase and rek Garuda's Twins, and take down all Nails, with the way people are running it nowadays. But like I said, its on the tank and veteran players to know the situation and adjust if needed. If half the party is not that up to gear with the rest of the other half, they gotta know to adjust. If they don't, that's their own fault.

The Nexus farmers should be using Party Finder...FFS...best way to Nexus grind is Cape Westwind anyways. If you're going to Roulette...don't be an asshole. PF a Nexus grind team for the fastest Trial facerolls instead of risking your time/energy on a Rouletted party that may be more than 50% new players. Castrum and Prae are mildly understable for the speedrun stuff but there's 0 excuse for doing that crap on a Primal..
A lot of people think they are saving valuable seconds by not dodging that aoe or early pulling just to get in a bit more dps.
But what they fail to understand is, every time I have to heal you is time spent that I could be dpsing,, so really, we gain nothing.
He's not complaining they're facerolling the content...he's complaining that the tanks take off and pull without a care about the rest of the party being ready or not. I still don't understand how killing the boss in a timely manner without a wipe on the first or second try is not "doing the right thing". The newbie still gets to see all, or most of the mechanics and phases . It's simply not feasible to explain every mechanic every time there is a new person in a roulette.
The OP maybe, but Wyrmnus very much seems to be complaining about how the content is being cleared in several of his posts.
