I think that waiting is equally valid in both situations.

I think they should leave crafting alone and let those who want to level most crafts, do it.

Not really, if you wait for an alchemist to make an item you won't get the item til later and you can still do whatever it is you were going to do that evening.

If you wait for the paladin you're stuck not doing what you had planned for the evening.
