Short Answer: While leveling, VIT. Once you are past Coil T7, you may consider switching some pieces to STR.

There's an interesting new meta coming up for STR warriors in endgame coil because of the power creep in tank and healing gear. Essentially, it is viable for warriors to tackle the second coil of bahamut T9 with all STR accessories and 30 STR in attributes. It does require a minimum of very specific i110 gear (and an unique healer strategy) to pull off, so you are generally better going with VIT and VIT accessories until you reach that point. The 10k seals needed for the stat reset is fairly easy to come by at that point.
