STR and VIT.
Both.
Most people start with VIT, but as you start outgearing the content, you may as well use STR.
Fending is technically tank gear. Once you become comfortable with that, then striking accessories are def a possibility. But If you are new, go fending.
Hoarders gonna Horde.
VIT First until overgeared the fight then you can try to swap in STR gear. also depend on how much you trust your healer ;P. more STR mean less HP, easier to die(mostly in Coil, usually not an issue with good healer).
WooT, I can't wait to ding fiddy. I have all my Gears from PLD, and my striking accs from DPS. I should have a nice kit out the gate. (rubs his hands menacingly)

Short Answer: While leveling, VIT. Once you are past Coil T7, you may consider switching some pieces to STR.
There's an interesting new meta coming up for STR warriors in endgame coil because of the power creep in tank and healing gear. Essentially, it is viable for warriors to tackle the second coil of bahamut T9 with all STR accessories and 30 STR in attributes. It does require a minimum of very specific i110 gear (and an unique healer strategy) to pull off, so you are generally better going with VIT and VIT accessories until you reach that point. The 10k seals needed for the stat reset is fairly easy to come by at that point.

You ideally want to collect both accessories. Melded Ruby (...or Topaz I guess but parry is near-pointless) accessories are also a good general piece to have, especially if you're a main tank by trade.
You want to have many gearsets if possible:
-VIT accessories, 515 acc (T8/9)
-STR accessories, 515 acc
-i90 melded, 515 acc
-Same thing with 495 acc for T6/7, if you want to optimize slightly over the above.
-STR accessories, minimal acc (for old content)
-same thing with VIT and i90 if you want
Use VIT sets for main tank in progression or if you're not confident in healers for whatever reason.
Use STR sets for offtank.
Use i90 meld sets for main tank if you can afford to; you don't lose that much VIT versus straight VIT set.
Meld options for Ruby or Topaz
Acc4/Vit4/Vit4/Det3/Det3 - This is the cheapest, avoiding Det4s, and is only 3 det under cap apiece.
Det4/Acc4/Vit4/Vit4/Det3 - Slightly more expensive, only 1 det under cap.
Det4/Det4/Acc4/Vit4/Vit4 - Most expensive, but caps det.
You can optionally drop Acc for Crit on a per piece basis but the Acc helps future-proof the set.
