I don't mind if they do emergency maintenance during my prime time.. I would just like to know what they need to fix. Most games let you know what the hotfix is for.

Welp, so much for grown up advice! I'll leave you kids to it then.
(It's perfectly valid when a customer makes a complaint to expect that customer to back up their claim of how they've been impacted, but if my advice is trolling I'll just bow out now. Enjoy your whine fest!)
At the risk of sounding cold, and with full understanding of the solution (rotate the schedule of emergency maintenance) it will not ever happen.
I'm up very very early in the mornings, and it takes away a portion of my playtime.
I understand it's frustrating.
I also understand that while I'm up and at it at 4:30AM CST, 95% of the player base isn't.
As an investor in SE, if they gave me news that they were cutting service to 95% of a market because 5% of the market is sore from having their playtime clipped, I would say that's a bad call.
It's a tradeoff. Companies will always cycle into the minimally invasive timeslot for their prime audience when a delayable maintenance is at hand.
Those super late night McDonald's also close for rotation for their 2 hours at 3am.
There's no point in trying to sue them or raging. Same exact concept.
A business trying to step on the fewest toes possible.
Sometimes we tend to think something is wrong because affects us, and we ignore that maybe it is not wrong for the other 95%. Does the majority has more reason than minority?... Who knows, but one thing is certain, if you start it cold-mathematical... It is not the same make 1000 players lose two hours of gameplay than 10 players lose two hours.
When I had my own server, I also did maintenance at hours where it would affect the less of the playerbase possible, it is the only hour for doing it, no rotation possible, you have to affect the less, we don't have any fault because some people can only play in SPECIAL schedules.
In my case It would be far better to do it in daytime, instead of having to wake up 4 hours sooner than normal for doing a maintenance, but not the case of the ones who were playing.
Oh another maintenance must have happened, another one of these threads...
Let's put it this way. The people who don't understand why maintenance is roughly at the same time will NEVER own a business. Well not for long anyways because the shareholders and board of directors would get rid of people like that so fast. Effect 10% of the player base or 90%?
I remember once maintenance was around 6pm EST. That probably impacted more people than when it is usually around 1AM - 3AM.

Every time I see these threads, all I get out of it is: whine, cry, whine whine, cry, and the inevitable it's not fair and my mommy told me life is supposed to be fair. Your mommy lied. Life isn't fair, and crying about it doesn't change that.
As has been said, SE is a business and will do maint when it impacts the smallest number of people. No, it doesn't make sense to change the times to possibly piss off a larger group of people. Even if you leave and quit the game, that's better, business-wise than risking 10x that many quitting the game.
And just to throw this out there, pretty much every maint they have is during my play time.
