I fed mine one single Mamook Pear yesterday, only got the message that the color will change in 6h, 2 hours later i fed another 5 Mamook Pears, i didn't pay attention to the Chatlog. I went to bed, woke up, my Chocobo is still Yellow. T_T

If it doesn't say it will change feathers then you haven't fed it enough for a change to take place.
